Physiologie du goût (titulus Francogallicus, scilicet "Physiologia gustús") est liber de gastronomia et de re coquinaria ab Ioanne Anthelmo Brillat-Savarin scriptus et anno 1826 sine auctoris nomine divulgatus,[1] auctore mox morituro. Saepe Francogallice reimpressus et in multas linguas versus est. Ad editionem anni 1839 addita est commentatio Honorati de Balzac titulo Traité des excitants modernes.


Inter aphorismata viginti ad caput libri posita saepius citatur quartum decimum, videlicet Un dessert sans fromage est une belle à qui il manque un œil (sit Latine "mensae secundae sine caseo sunt puella pulchra oculo carente").
